What a dish costing is
A dish costing (escandallo in Spanish) breaks down what a dish costs: each ingredient, how much of it goes in and what that costs at the price you buy it. It tells you what each portion leaves you and what you need to charge for it.
How it is worked out
Each ingredient costs the share you use of what you buy: 250 g from a 10 kg sack of potatoes at €9.90 is €0.25. Purchase prices go in before VAT, as on the invoice, because you reclaim that VAT. The ingredients add up to the cost of the recipe and, divided by the portions it makes, to the cost per portion.
Margin and food cost
The margin is worked out on the menu price before VAT, which is what you actually keep: patatas bravas at €6.00 with 10% VAT is €5.45. If a portion costs you €0.65, it leaves you €4.80, or 88.0%. The food cost is the other part: 12.0%.
